About Chef Nicole

Nicole Derseweh is a best-selling cookbook author, a world-class vegan chef with culinary training at Le Cordon Bleu, CEO of The Martha Project, private chef to Hollywood’s most famous health-conscious stars, and creator of LOVE LOX. She believes that good food is good food, and people will eat it if it’s delicious - it doesn’t matter if it’s vegan.

Chef Nicole’s passion for using food to transform physical and mental health led to her founding The Martha Project, an LA based nonprofit that feeds plant-based meals to the houseless community. Named after Nicole’s grandmother, they have catered thousands of delicious, sustainable meals to those in need.

The inspiration for LOVE LOX came while shooting a TV cooking show pilot, recreating incredible vegan versions of iconic dishes from world famous celebrity chefs. The show’s host, a pregnant celebrity, was saddened that she couldn’t eat real lox and bagels with the rest of the crew. Chef Nicole got to work in her test kitchen and ended up with a mommy safe, plant-based, eco-friendly solution that not only tastes better than the real thing, but helps prevent the extinction of over 49 endangered species!

Chef Nicole is currently pitching a new TV show concept showcasing vegan food, travel and spirituality from around the world set to debut in 2024.
